The public has gone coconut crazy lately. Coconut water, coconut flour, and coconut sugar are everywhere. Coconut oil, it turns out, might be the one product that is more than a fad. With a light flavor and a higher smoke point than olive oil, coconut oil is tasty, versatile, and contributes some brain benefits as well.

Studies have already shown that coconut oil is effective in combating and delaying the onset of Alzheimer’s disease, but new research from the Journal Of Oleo Science has found additional benefits. More than 50 percent of the fatty acids in coconut oil are made up of lauric acid. It turns out that lauric acid promotes the production of ketones within brain cells called astrocytes, providing fuel to neurons and improving overall brain health.
 
Great article, every morning I put unfiltered organic coconut oil and organic craft butter in my coffee, ie: Bullet Proof coffee, for the reasons talked about in this article.
 
Never even thought about adding it to coffee. Great idea. Any good brands?
As for the coconut oil, I don't have a preferred brand, but any organic extra virgin, 100% pure cold-pressed, unrefined coconut oil will do. Make sure it's unrefined to give that slight nutty coconut flavor to the coffee. As for the butter I tested like 20 some different brands to find the perfect taste that suited me. This is the butter I prefer, Vital Farms® Sea Salted Butter Sticks. But any organic grass feed craft butter will do. I like the little bit of sea salt for flavor and to start the day with some electrolytes in my system:

I've tried ever craft butter from your standard grocery store to Whole Foods and Natural Grocers and Vital Farms butter is my favorite.
