These vegetables contain glucosinolates, which, when lightly cooked, convert into a substance called sulforaphane. Molecular biologists at the Second University of Naples, found that small amounts of sulforaphane— about what you get from a serving or two of cabbage stimulate the development and protection of stem cells, potentially improving recovery and growth in hard-training athletes. Brassica vegetables are also low in calories, high in fiber, and help balance testosterone and estrogen levels.
